On this tour, you'll experience every step firsthand: harvesting beans from the coffee trees, washing, fermenting, drying, and roasting — all the way through to your first sip. You'll gain a deep appreciation for the craft behind every cup.

② Learn from the Karen: Living in Harmony with Nature
Your host Khui has planted over 1,000 coffee trees — without cutting down a single tree in the surrounding forest.

His approach to sustainable farming within a thriving forest ecosystem is a masterclass in environmental wisdom. Beyond coffee, you'll see how the Karen people weave nature into every aspect of their daily lives.
③ Relax and Recharge in Rural Nature
The village is surrounded by lush forest and rice paddies, where clean air and peaceful surroundings welcome every guest.

This isn't the dramatic scenery of a tourist viewpoint — it's the quiet, everyday beauty of the natural world. A chance to breathe, slow down, and truly recharge.

Your Host: Khui
Khui lives in Nong Tao village, a Karen community in the mountains north of Chiang Mai, where he grows coffee, plum, and rice.
He is deeply committed to living in balance with nature — planting coffee trees within the existing forest rather than clearing land for cultivation. He also actively plants trees to offset the carbon footprint of air travel, reflecting his strong environmental values.
Schedule
Day 1
8:00 — Depart from Chiang Mai
Set off from central Chiang Mai toward the Karen village, where a full day of new experiences awaits.
8:30 — Stop at the Local Market
Along the way, we stop at a local market bursting with fresh produce and a glimpse into everyday Thai life. Try some local food you won't find at any restaurant.

10:30 — Arrive at the Village — Welcome Coffee
Upon arriving at the Karen village, settle in at Khui's handmade wooden café and enjoy a carefully hand-dripped welcome coffee.

The café, built from local timber, has a warm, unhurried atmosphere that immediately puts you at ease.
11:30 — Lunch
Lunch at the village features home-cooked Karen cuisine: stir-fried local vegetables and pork, Thai-style omelette, and other heartfelt dishes made with care.

Khui is a talented cook. Don't miss his signature Gapao rice.

13:00 — Coffee Harvesting Experience
Now for the main event: coffee harvesting. Hop in the back of a pickup truck and head up to the farm deep in the mountains.

Among roughly 1,000 coffee trees growing within the forest, you'll hand-pick only the bright red, fully ripe cherries.

It's instantly addictive — and trickier than it looks at first. But as you get into the rhythm, your eye for the perfect cherry quickly sharpens.


After harvesting, climb back into the truck and return to the village, passing fields of rice and wildflowers — a landscape unlike anything you'd see back home.
15:00 — Coffee Experience ① — Washing & Drying
Back in the village, learn how the freshly harvested cherries are sorted, washed, and prepared for drying.

You'll watch the process of removing unripe or damaged beans, then stripping the fruit skin — learning just how much effort goes into each batch.

Khui then walks you through the drying methods used to bring the beans to the next stage.

17:00 — Village Walk
Take a relaxed stroll around the village, soaking in the local culture and scenery. Warm smiles from the villagers and the beauty of the natural surroundings do wonders for the soul.
18:00 — Dinner Around the Firepit
In the evening, gather around the open firepit in Khui's handmade house and enjoy his home-cooked dinner. As the fire crackles, hear about Karen life, forest stewardship, and the philosophy behind it all.

Fall asleep under a sky full of stars.

Day 2
7:00 — Almsgiving & Breakfast
The village morning is magical — misty, quiet, and unlike any alarm clock you've ever known.

Join the local almsgiving ceremony early in the morning, offering food to the Buddhist monks and connecting with the village's spiritual tradition.

Afterward, sit down for a simple, nourishing breakfast.
8:00 — Coffee Experience ② — Roasting & Tasting
The final step: roasting the beans you harvested yesterday. Listen to the sound of roasting, watch the color transform, and breathe in the rich aroma as the beans reach their peak.

Since freshly roasted beans taste best after a few days' rest, your beans will be portioned and packaged for you to take home as a souvenir.
9:30 — Village Walk (Weaving, School Visit & More)
After coffee, explore the village at a leisurely pace. Watch Karen women weaving on traditional looms and visit the village school to meet the local children.

These moments of connection — the smiles of the kids, the patience of the weavers — are the ones that stay with you long after the trip ends.

11:30 — Depart from the Village
It's always hard to say goodbye. But the memories, the coffee, and the connections will stay with you.
~13:00 — Arrive Back in Chiang Mai
Return to central Chiang Mai, and bid farewell with the warm glow of a meaningful journey.

While an overnight stay is recommended to fully enjoy the experience, a day trip is also possible. A sample day trip schedule is shown below.

Accommodation & Shower
You'll sleep in a wooden house built by Khui himself — simple, cozy, and full of character.

The village shower room is shown below.

Note: The shower is cold water only. During the dry season (November–February), it can get quite chilly, so body wipes are a good alternative if you prefer not to shower.

Notes & Considerations
- Weather: Programs may be adjusted depending on weather conditions. In light rain, activities generally proceed with appropriate caution. In heavy rain, we'll wait for it to pass and switch to indoor alternatives.
- Insects & Wildlife: The forest is close by, so insects and small lizards may appear nearby. They are generally harmless. Mosquito nets are provided for sleeping.
- Valuables: Please keep passports, wallets, and other valuables with you at all times.
- Internet: Mobile signal may be weak or unavailable in parts of the village. Think of it as a digital detox!

Bonus: How the Karen Coffee Tour Began
It all started when ManiTabi founder Naoto Sakata decided to launch a local tour business. With no existing connections in Chiang Mai, he wasn't sure where to begin (August 2023).
He reached out to Mari Okamoto, a long-time Chiang Mai resident, who introduced him to Khui — a Karen farmer with a deep respect for nature and a genuine appreciation for Japanese culture.
Aiming for a trial tour in early 2023, Naoto held online planning meetings with Khui and made a quick 4-day scouting trip in early December to experience the tour firsthand.

After much trial and error, the first trial tour launched at the turn of the new year. Though participation was limited, feeling the real value of "living like a local" first-hand was a major milestone for Naoto.

This experience ultimately led Naoto to leave his previous job and move to Chiang Mai.
